Grilled Chicken Fajita Kebabs

Ingredients

  • 16 oz. boneless skinless chicken breast, chopped into squares (3medium breasts)
  • 3 large bell peppers, chopped into squares (any color)
  • 1 medium purple onion, chopped into squares
  • 1 tablespoon of olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 2 teaspoons paprika
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 1 lime, cut into wedges
  • fresh cilantro, chopped

Instructions

    1. Preheat grill or oven to 400ºF.
    2. Prepare veggies by slicing into squares. Transfer into a gallon-sized bag and add a tablespoon of olive oil. Shake.
    3. Prepare chicken breast by slicing into squares and transfer into another gallon-sized bag.
    4. In a small bowl, mix together all of the spices to create your rub.
    5. Add half of the spice mixture to the vegetables and the other half to the chicken. Shake well and let sit for 10 minutes (place chicken in the fridge).
    6. Place peppers, onion, and chicken onto skewers (alternating between the three). Repeat.
    7. Lay a piece of tin foil onto the grill and spray with cooking spray.
    8. Set kebabs on top of tin foil and grill for around 15 minutes rotating kebabs every five minutes. Add lime and cilantro after removing from heat. Enjoy!

Corn on the Cob with Garlic and Parmesan

Ingredients

  • 4 ears fresh corn
  • 2 tablespoons butter
  • 1 clove garlic grated or minced
  • 1/4 cup freshly grated Parmesan
  • 1 tablespoon freshly chopped parsley

Instructions

  1. Preheat grill to 350-400 degrees F. Remove most of the husks on the corn and leave the innermost layer intact. Pull them back just enough to remove the silks, then place back over the corn.
  2. Place corn on preheated grill. Cook, turning once or twice until kernels are bright yellow, 15-20 minutes.
  3. In the meantime: place butter and garlic in a small heat-safe bowl. Microwave until butter is melted, 10-15 seconds.
  4. Remove remaining husks and brush the corn kernels with melted garlic butter while still hot. Sprinkle with Parmesan cheese and parsley.
  5. Serve immediately.

Grilled Soy Brown Sugar Salmon in Foil

  • 1 1/2 pounds salmon with skin on
  • 1/4 cup brown sugar
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1/4 cup lemon juice
  • 1 teaspoon freshly ground black pepper
  • 3 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • Parsley, chopped for garnish
  • Lemon wedges

Instructions

  1. Combine all marinade ingredients in a small bowl.  Place the salmon in a large zip-tight bag or shallow glass baking dish and add the marinade, turning to coat the fish entirely.  Seal tightly or cover with plastic wrap and marinate in the refrigerator for 1-3 hours.
  2. Preheat grill to medium-high heat.  Take a large piece of heavy-duty aluminum foil and remove the salmon from the marinade, laying it skin side down in the center of the piece of foil.  Fold the long sides up and then over themselves, repeating with the short sides, to create a sealed packet containing the salmon.
  3. Transfer the foil-wrapped salmon to the hot grill over indirect heat not directly over the flames and close the grill lid. Cook for 15-18 minutes until almost entirely cooked through.  Brush the grill grates directly over the flames with a little oil, then carefully open the foil packet and using one of the long edges of the foil, and flip the salmon directly onto the grill grates over direct heat to char the top. Grill just until cooked through, and grill marks appear (1-2 minutes) being careful not to overcook, the use two large spatulas to remove the salmon from the grill.
  4. Transfer to a serving platter and garnish with chopped parsley and lemon wedges before serving.

Grilled Garlic Herb Flank Steak with Avocado Corn Salsa

Ingredients

  • 2 pounds flank steak
  • ½ cup extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 Tablespoon chopped rosemary
  • 1 Tablespoon chopped thyme
  • 1 Tablespoon chopped oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • Avocado Corn Salsa:
  • 2 avocados, diced
  • 3 roma tomatoes, diced
  • 1 (11 ounce) can yellow corn, drained
  • ½ red onion, diced
  • ¼ cup chopped cilantro
  • juice of one lime

Instructions

    1. In a large bowl or ziplock bag, add olive oil, garlic, chopped rosemary, thyme, oregano, salt and pepper. Add flank steak and marinate for 1 hour or overnight.
    2. Preheat grill to high heat. Discard marinade and add flank steak to the grill. Let the steak sear on high heat for 1-2 minutes on each side and then move to indirect heat and let cook until desired doneness. Medium rare is 130-135 degrees on a thermometer. Remove steak from heat and cover with aluminum foil and let rest for 10 minutes.
    3. To make the avocado corn salsa: Add avocado, tomatoes, corn, red onion, cilantro and lime juice to a medium sized bowl and mix until combined.
    4. Slice the steak across the grain and top with avocado corn salsa.

Classic Bacon Cheeseburger

FOR THE BURGER PATTIES

  • 1 onion finely chopped
  • 1 garlic clove crushed
  • 500 g beef mince
  • large handful fresh parsley finely chopped
  • 1/2 cup fresh breadcrumbs
  • 1 egg beaten
  • 1-2 teaspoons salt to taste
  • black pepper to taste

FOR THE CHEESEBURGERS

  • 4 slices American/Processed cheese
  • 8 slices bacon cooked to your preference
  • fresh lettuce
  • ripe tomatoes sliced
  • 4 tsp mayonnaise
  • 4 butter-toasted bread rolls

Instructions

  1. Fry the onion in a large frying pan in a splash of olive oil until golden brown. Add the garlic and fry for another 30 seconds then remove from the heat. Allow to cool to room temperature.
  2. Mix the cooled onions with the beef, parsley, breadcrumbs, egg, salt and pepper. To test the seasoning, fry a teaspoon-full of the mixture in the pan you cooked the onions in. Adjust the seasoning to taste.
  3. Divide the mixture into 5-6 (depending on how you big you want the patties), and form patties with wet hands.
  4. Place on a tray lined with baking paper and place in the fridge to chill for 30 minutes.
  5. When the patties have rested, heat a large cast iron pan/griddle pan until hot then cook the burgers until charred and cooked to your preference.
  6. Remove from the heat, top with the cheese and cover with foil for 2 minutes.
  7. Top the buns with a generous spoonful of mayo, lettuce, tomato, the patty with cheese and finally bacon.
  8. Serve immediately.
